Sparky and Reba Eat the World: It’s raining, but we have no regrets.

Just when we thought March was the fastest month so far this year, in sweeps April to take the title in a crushing victory! 

Really, the month flew by far too quickly. 

A lot of things happened, including a “work” trip for me and the souvenir of a gnarly cold. Sparky had no less than one thousand things on the go at work. And the kid has been cruising through the school year at an alarming rate. 

By now you should be able to gather where this is going… 

We didn’t really get a chance to travel and eat the world in our kitchen. 

Bet this sounds a lot like last month’s post. Doesn’t it? 

But that’s part of why you’re here, isn’t it? For honesty. For rawness. For the truth.  

And that’s just it, we ran out of fucking time to plan, shop, and execute a gloriously delicious meal from the region/country of our choosing. Most nights this month we were lucky to cross paths before 10 pm. If we were even in the same country. 

Traveling Nowhere 

We were hoping for Portugal. 

When things like this happen, we fight disappointment with what the fuck can you do?  

And that tends to find us winning. Even if only in a small way. 

It can be easy to think of all the things you didn’t do or should have done. Dig deep and find that gratitude for all the things that you did! 

Our plan was to sit one evening and virtually visit different regions of Portugal while researching local dishes and compiling menu ideas.  

But we lost the first third of the month to preparations for my trip and my absence from home. And while it may sound like that was a negative thing, we can promise it was not. Time consuming just the same.  

Right before I left, Sparky and the kid had been snarfy. It’s that funny time of year where you play is it sick or is it allergies? And it feels like there are no winners. Whatever it was, it hit me the day before I left, and though I was able to muscle through my trip, I came home and took eight (or so) days to fully recover. 

Next thing you know, it’s Friday April 28th

2023: Year of the Pivot  

Everyone is tired of hearing that from me. 

But we have employed it so much this year and accepting the need to pivot or completely change the way we were going to do something… 

We thought we could sneak a little something in over the weekend though thoughts of that were quickly vanquished by schedule changes and a busy-as-all-heck week ahead.  

And it also looked pretty unlikely that we would sit down together as a family. 

TIME FOR A PIVOT! 

Sparky worked all day Saturday, so I dropped him then hustled to the store and rounded up all the groceries and things we needed for a family feast in celebration of Cinco de Mayo in April. 

You read that correctly. 

RECIPLEASE? 

I love to feed people and Sparky loves to eat. It’s a winning combination. But often times, people comment on pictures of our food. And that’s why we thought it would be fun to share our adventures in a blog/recipe-hybrid. 

Does anyone care? Who knows!  

Well, I do, LOL. No one downloads the recipes. Bah! 

Looking ahead to this Friday, we thought we’d share my Pico de Gallo or salsa fresca, for you to (not) download for Cinco de Mayo or your next Taco Tuesday.
